Recipe | Gingerbread and pear loaf






I am an absolute sucker for anything ginger - I love it. I found this recipe in a magazine at my grandma's house over a year ago and have changed it slightly. I love baking it because it fills our apartment with the smell of gingerbread - perfect for a cool Brisbane day alongside a flat white!

Melted butter for greasing
1 large pear
1 1/2 cups plain flour
1/2 cup brown sugar
60g butter
1/2 cup golden syrup
2 tsp ground ginger
2 tsp mixed spice
1 tsp bi-carb soda
1 egg, beaten
1/2 cup milk
Sunflower and pumpkin seeds to garnish (optional)


Pre heat oven to 180°C
Grease a 20 x 10cm loaf tin with melted butter and line with baking paper
Cut the pear from stalk to base and place flat side down on the bottom of the tin
Sift the flour, sugar, spices and bi-carb soda in a bowl
Put milk, butter and golden syrup in a small saucepan over a low heat and cook, stirring until butter melts then let cool before adding beaten egg
Add the mixture to the flour mixture and stir until just combined
Pour mixture evenly over pear in tin and smooth surface
Sprinkle the sunflower and pumpkin seeds evenly over the mixture
Bake for 40 - 50 minutes or until cooked when tested with a skewer
